Amaretti alla maniera Umbria are gluten-free, Italian-style macarons. We follow an Umbrian recipe recommended by our good friend, Maria Cicconi from Fuscagna, Localitta Titta, Citta di Castello. Maria was born in 1936 and the essentials of this recipe were passed onto her by her mother and reportedly her mother before that.

Amaretti are possibly the most historically famous of all the biscotti of Italy and have spread from their origins in Venice across all of Italy. Over time, each region or City State developed its own variation. The romantic version of the Amaretti story is that two lovers, who operated a bakery shop in Serrano, created the product to celebrate the visit of the Cardinal of Milan in 1719. But an accurate analysis indicates that the Amaretto originated in Venice in the 17th century as a result of the creative skills of Francesco Moriondo, who was the chief pastry chef to the Court of Savoy. Certainly, it is clear that this biscotti brings with it 300 years of history.
The base ingredients are powdered almonds, egg whites and sugar–all natural with no preservatives. The old world enjoyed these delectable biscotti with liquor, desert wine or coffee.
In Italy, they store well without refrigeration given the low levels of humidity. In the Philippines, we recommend storage in a cooler environment after the pack seal has been opened. The individual wrapping offers protection against humidity but we suggest that the pack's seal is closed tightly to limit humidity transfer when stored.
